Zucchini Recipes That Taste Absolutely Amazing That “Even I Can Make”

How do you cook your zucchini?

As harvest times arrives in its typical fast and plentiful way we are always looking for great new recipes to cook and share our fresh zucchini. If you are anything like us you have been waiting anxiously for that first perfectly ripe zucchini (and all the other goodies of course) that seem to take their sweet time coming. And then almost immediately after you pick that very first one, Bam! The zucchinis start to come fast and furious for the next 6 weeks (yahoo!). We love when the garden is at its peak but then we were often left pondering the question, “How should we prepare our zucchini tonight”?

We’ve decided to share some of our most favorite Zucchini recipes with you in the hope you will share yours with us. Enjoy!

Sauteed Zucchini and Feta Recipe
If you are looking for something quick and simple (who isn’t) then this is a great dish for you.
You can serve it as a side or as a main course served over pasta. It’s that good.

Zucchini Pie Recipe
A favorite Summer recipe when the Zucchini in plentiful.
Make sure you make a few extra zucchini pies and freeze them for another day.3 cups of zucchini peeled and shredded
(2 small Zucchini or one large Zucchini usually does the trick)
1 large onion -chopped into small pieces
1/2 cup grated parmigian cheese
1/2 cup shredded cheddar cheese
1/2 cup olive oil
1 cup of Bisquick
4 eggs beaten
4 tablespoons of fresh parsley (I hope it’s out of your garden)
1 teaspoon of salt
1 1/2 teaspoons pepper (yields one 9″ pie pan per shown ingredients)

Preheat oven to 350 degrees.  In a large bowl mix shredded zucchini, onion, olive oil, parsley, salt, pepper, and beaten eggs.  Add Bisquick, shredded cheese, and parmigiana cheese. You got it, put all your ingredients in one bowl and mix well.  Pour mixture into a 9-inch pie plate and bake for 35 minutes or until the top of the pie is golden brown.  This can be served hot or at room temperature.

3 cups zucchini sliced in 1/4 inch rounds
1 medium red onion, chopped
3 gloves garlic
1 tablespoon butter
4 ounces crumbled feta cheese

(Yield: Serves up to 4)Melt butter in a frying pan on medium heat, add your chopped garlic and coarsely chopped onions, and cook this until the onions are translucent. Add Zucchini and cook for about 15 minutes until zucchini is tender.
Add crumbled feta cheese and cook for an additional 4-5 minutes. Serve as a side dish or spread it over your favorite pasta. Mmm mmm good!

Zucchini Bread
This is an amazing recipe that my dad often used when we were kids. Shortly after my mom heard that I was sharing Zucchini recipes, she broke open the volt and sent me my dad’s favorite old recipe. It really brings back some great childhood memories of how good zucchini can taste (and smell in this case). I hope you enjoy your zucchini bread as much as I do. (Yield: Makes two loaves)3 eggs
1 teaspoon baking soda
2 1/2 cups sugar
1 teaspoon baking powder
1 cup vegetable oil
3 teaspoons cinnamon
2 cups grated raw zucchini, peeled or unpeeled
1 teaspoon salt
3 teaspoons vanilla
3 cups flour
If desired, …1 cup coarsely chopped nuts. Walnuts work great.

Preheat oven to 350 degrees.
Beat eggs until light and foamy in a medium or large bowl
Add sugar, oil, zucchini, and vanilla
Mix this well but mix lightly
Combine flour, salt, baking powder, and cinnamon and add this to the egg-zucchini mixture. stir well until blended, adding in nuts if desired.
Pour into two greased 9″ x 5″ x 3″ loaf pans.
Bake for 1 hr at 350 degrees now this is one zucchini recipe that nobody can resist. I can almost smell it now. Enjoy!
